Presentation

The Bourgogne Côte d’Or appellation is a new appellation beginning with the 2017 vintage. It aims to offer all of the nobility of Burgundy’s regional appellations by using grapes that come exclusively from the finest terroirs in the Côte de Beaune and the Côte de Nuits, a philosophy the House of Edouard Delaunay fully subscribes to.

Terroir

75% of our cuvée is crafted from Pinot Noir grapes that hail from the Côte de Beaune (Puligny-Montrachet 70% and Chorey-les-Beaune 5%) while the remaining 25% come from the village of Gevrey-Chambertin in the Côte de Nuits. The plots all benefit from southeastern exposure and are located at the base of the slope where the soil is composed of clayey alluvium, silt and gravel. These terroirs, composed of scree from the parent rock found in the Grand Cru vineyards, are deep for the most part, and allow the wine to express its richness and power along with its elegant, fruity notes.

Winemaking

A short period of cold maceration allowed us to extract fruit and colour, after which cuvaison lasted for approximately a dozen days. As for the great wines of Burgundy, this wine was aged exclusively in oak barrels for nine months (20% new oak). Each cuvée is vinified and aged separately. Final blending is conducted just before bottling.

Tasting

Magnificent deep crimson red in colour. The nose is expressive, elegant and pure, offering scents of baked goods (cherry clafouti, vanilla, cherry) and impressive ripeness. Notes of spices (nutmeg, coriander, pepper). Generous start to the palate with impressive volume. Flavours of redcurrant almond cake and raspberry, lend pleasing sucrosity and freshness. The tannins are bold, elegant and balanced. Freshness dominates the palate and is complemented by well-integrated acidity. The tasting experience culminates with a generous finish boasting sweet notes of red fruit sabayon punctuated by notes of blackcurrant. A very fine Pinot Noir.

Food pairings

This wine is perfect with a carpaccio of red tuna, a Bresse chicken with mushrooms or a veal chop roasted with herbs.
