Domaine Baudouin Millet

Founded in the early 1980s in Tonnerre, Domaine Baudouin Millet is the result of a bold agricultural transformation—converting former cereal land into a vineyard exclusively dedicated to Chardonnay, the emblematic grape of the Chablis region. Today, the estate spans approximately 16 hectares, mainly in AOC Petit Chablis and Chablis, with additional parcels in Chablis Premier Cru Vaucoupin and Bourgogne Chardonnay.

Located further south than most Chablis estates, the domaine enjoys a slightly warmer climate, allowing for more complete ripening of the grapes. The vines are rooted in Kimmeridgian clay-limestone soils, rich in marine fossils, which lend the wines their refined minerality and signature tension.

The vineyard is managed under sustainable viticulture principles, with controlled grass cover and meticulous soil work to preserve biodiversity and prevent erosion. In the cellar, vinification is carried out exclusively in stainless steel tanks to maintain freshness, aromatic purity, and a clear expression of terroir—standing apart from the more traditional use of oak in the region.

Wines from Baudouin Millet are noted for their brightness, precision, and lively character, offering aromas of citrus and white flowers carried by a crystalline structure. The estate is also a member of the Vigneron Indépendant network, reflecting its commitment to artisanal, fully controlled production from vine to bottle.
