Bernard Michaut
Located in Beine, in the heart of the Chablis region, Domaine Bernard Michaut has grown significantly since the 1960s, expanding from 2 to 53 hectares. Founded by Henri Michaut, the estate is now run by his descendants, who uphold a rigorous and ambitious vision of the craft. The vineyard covers the Petit Chablis, Chablis, and Chablis Premier Cru appellations, notably within the Beauroy and Vau-Ligneau climats.
Its parcels, spread across varied altitudes and exposures, rest on a mosaic of Kimmeridgian and Portlandian soils. This geological diversity imparts remarkable structure and complexity to the wines, well above the usual standards of the appellation. The vineyard is cultivated under a sustainable philosophy, with careful attention to soil management, yield control, and biodiversity preservation.
While many producers rely exclusively on stainless steel to retain the wines’ tension, Domaine Bernard Michaut takes a more nuanced approach. Around 10% of the juices are aged in oak barrels, bringing subtle roundness, depth, and texture, while the remainder is vinified in stainless steel to preserve fruit brightness and aromatic precision.
