The story of Domaine Jaeger-Defaix is one of two winemaking worlds coming together. On one side lies the deep-rooted Chablis tradition of the Defaix family, firmly established in Burgundy’s wine heritage. On the other, a new terroir for expression: the Côte Chalonnaise, where the family chose to write a new chapter in Rully. Today, the estate spans 6 hectares of vineyards, including 1.5 hectares of Rully Village and 4.5 hectares of Rully Premier Cru, reflecting the domaine’s strong connection to some of the appellation’s finest terroirs.
Over time, the estate has embraced these limestone terroirs, different yet complementary to those of Chablis. This dual influence has shaped a distinctive identity, where the precision and tension of northern Burgundy meet the generosity and balance of the Côte Chalonnaise.
