In Mercurey, Domaine Tupinier-Bautista stands out as a leading signature of the Côte Chalonnaise, driven by Manu Bautista, who took over the estate in 1997 and brought a renewed energy. The vineyard, covering around 11 hectares, is farmed with meticulous care: manual harvesting, strict sorting and gravity-fed vinifications, combined with ageing in natural cellars carved into the rock.
