Presentation
Volnay’s red wines, renowned for their unique alliance of depth and finesse, subtlety and a silky, velvety palate, are among Burgundy’s finest. They have always been among the favourites of the Delaunay family. Succeeding in crafting and presenting a beautiful Volnay, imbued with all of the qualities of its appellation, was a task that the House of Edouard Delaunay could not pass up the opportunity to undertake.
Terroir
Volnay’s fame dates far back in time. In 1666, Claude Bouchu, Louis XIV’s intendant, recommended what he considered "the best wine in Burgundy" to the king. Perched high up in the Côte de Beaune (between 230 and 280 metres in altitude), Volnay is adjacent to hill of Chaignot. The appellation is surrounded by the villages of Meursault, Pommard and Monthélie. The 60-year-old vines are located at the foot of the slopes. They grow in deep, rich soil that is composed of limestone, clay, silt and red marls, lending minerality and finesse to the wine.
Winemaking
Always reaching optimal ripeness, this appellation is the first to be harvested at Edouard Delaunay! The grapes were handpicked and completely destemmed before undergoing vinification without the use of sulphites. The cap was punched down only twice, but the must was pumped over regularly to preserve the terroir’s finesse. Cuvaison lasted 19 days including 4 days of pre-fermentation maceration. Barrel ageing lasted 17 months (37% of new oak).

Tasting
Gorgeous dark ruby in colour. The first nose is reminiscent of fruit sabayon (cream, red fruit, cherries). Then come hints of smoke, pine and freshly baked bread. Floral nuances of peony surface next, lending freshness. Magnificent start to the palate, nice and round with pleasing sucrosity, balanced by lovely acidity. Rich, complex notes of liquorice and smoke are followed by flavours of spices (clove, ginger, cinnamon). The tannins are ripe and spicy. This remarkable, complex, balanced wine is well suited for laying down, as it will reveal all of its character with age.
Food pairings
Superb with couscous or tajine. On the cheese side, it will enhance a Brie, a Reblochon or a Camembert.
