Presentation
The Domaine de Panisse, located in Châteauneuf-du-Pape, is a Provençal building dating back to the 15th century, surrounded by 6.5 hectares of vineyards. The 4 main grape varieties of the region, namely Grenache, Syrah, Mourvèdre, and Cinsault, share the beautiful part of the vineyard. The Vacheron family, also the owner of Clos du Caillou, seized the opportunity to buy this estate, located 2km away from theirs. The sale was completed in 2020, and naturally, the younger generation immediately set out to convert the entire vineyard to Organic and Biodynamic Agriculture. The Domaine de Pan
Location
The plots are located in the place called "La Janasse", situated to the northeast of the Châteauneuf-du-Pape appellation. This cuvée is a true expression of terroir, as it includes all the vines in the Châteauneuf-du-Pape AOC, from the Domaine de Panisse.
Terroir
Soils composed of sand, clay, and rolled pebbles on continuous plots at the location "La Janasse".
Harvest
Manual grape harvesting with sorting in the vineyard and then in the cellar.
Winemaking
Scratch at 100%, then fermentation in concrete tanks by indigenous yeasts. Manual punch-downs and rack and returns are carried out throughout the grape maceration (47 days).
Ageing
In demi-muids (80%) and in barrels (20%) for 14 months.

Tasting
The wine has a deep ruby color. On the nose, notes of wild berries, dried flowers, and spices emerge. The palate, fresh and silky, reveals integrated tannins. Black fruits, white pepper, cinnamon, undergrowth, and licorice share the aromatic palette. The Mas stands out for its diversity of grape varieties and terroirs, making it a complex and elegant wine.

Poached egg with bacon, red wine sauce, veal medallion, rich morel jus, mashed potatoes, braised beef blade, Jerusalem artichokes with parsley, Vaironna chocolate mousse and blackberry jelly.
