Anchored in Nuits-Saint-Georges, the Domaine Chevillon Chezeaux is a true family heritage, cultivating the vine for several generations. Its commitment to preserving the identity of great Burgundian terroirs is reflected in rigorous and environmentally friendly cultural practices. The vines are cultivated in sustainable viticulture, with meticulous soil work favoring optimal maturity of Pinot Noir. Vinification is traditional, with open tank fermentations and prolonged aging in French oak barrels, bringing beautiful aromatic complexity and great depth to the wines. The wines of the domain reveal all the typicity of Nuits-Saint-Georges: beautiful structure, silky tannins, and aromas of black fruits, licorice, and undergrowth. With great aging potential, they are among the great references of Côte de Nuits.

Location

The grapes for this cuvée come from several carefully selected parcels around the village of Nuits-Saint-Georges, on the eastern slope of the Côte de Nuits. All vines are old, some over 60 years of age, planted on mid and lower slopes with excellent exposure. Altitudes range between 230 and 260 metres, with east to southeast-facing plots benefiting from consistent sunlight throughout the growing season. This patchwork of old vines brings depth, complexity and a signature expression of Nuits-Saint-Georges.

Terroir

The soils are classic clay-limestone from the Côte de Nuits, with brown marl, gravel and limestone scree. The shallow depth encourages deep root systems, leading to naturally low yields and concentrated grapes. These old vines produce berries with excellent balance and aromatic intensity. The combination of terroir and vine age results in a structured, dense yet elegant wine that faithfully represents the character of Nuits-Saint-Georges.

In the vineyard

The estate farms these parcels with special care, applying sustainable and environmentally friendly methods. Soils are worked mechanically, herbicides are banned, and natural grass cover is managed according to each row’s needs. Treatments are kept to a minimum and adapted to the vintage. The management of old vines requires precision and respect for the plant’s cycle. Biodiversity is encouraged and every intervention aims to preserve the vineyard’s vitality and the truth of its expression, year after year.

Harvest

Harvesting is done by hand, with careful sorting in the vineyard. Grapes are picked at perfect ripeness and transported in small crates to preserve their condition. At the winery, bunches are partially destemmed, depending on the vintage, to balance freshness and structure. The fruit is transferred by gravity into tanks to avoid any harsh extraction. This meticulous approach ensures that the full potential of the old vines is captured and preserved in the final wine.

Winemaking

Fermentation takes place in open vats using indigenous yeasts, with maceration lasting 15 to 18 days. Gentle punch-downs and pump-overs are used to achieve a delicate extraction.

Ageing

The wine is aged for 18 months in oak barrels, around 30% of which are new, allowing structure to develop without overpowering the fruit. This long élevage softens the tannins, enhances complexity and brings harmony. Bottling is done without systematic filtration, respecting the wine’s natural balance.

Tasting

Nuits-Saint-Georges Vieilles Vignes reveals a deep garnet hue. The nose is intense and layered, with notes of black cherry, blackberry, liquorice and sweet spices. The palate is broad and silky, with present but refined tannins and a fresh backbone that balances the structure. It is a dense, distinguished and elegant wine, combining power with finesse. It can be enjoyed young after decanting, but also shows great ageing potential over several years.

Food pairings

This wine pairs beautifully with flavourful dishes such as roasted veal fillet with mushrooms, slow-cooked lamb shoulder with herbs or a washed-rind cheese like Soumaintrain. It also complements richly flavoured vegetarian options such as butternut squash gratin with aged Comté. For a sweet pairing, try it with a spiced damson plum tart or a dark chocolate and black cherry dessert.
