Presentation
Located in the heart of Savigny-lès-Beaune, this family estate dates back over five centuries. Brothers Philippe and Jean-Jacques Girard, heirs to ancestral know-how, each developed their own estate. Today, Arnaud Girard, Philippe's son, takes over. The estate spans 11 hectares, practicing sustainable viticulture, with a distribution of 60% whites and 40% reds, on prestigious appellations: Savigny-lès-Beaune, Pernand-Vergelesses, Aloxe-Corton, Nuits-Saint-Georges, Pommard, and Volnay. Vinifications respect the vintage, with careful aging in oak barrels, offering elegant wines with great aging potential. Its distinctive feature? Rigorous family transmission and precise vinification that honor the terroirs of the Côte de Beaune.

In the vineyard
The vineyard is carefully tended with sustainable practices. Soil management (tilling, grassing), canopy control, and yield regulation ensure balanced ripening. Harvesting is adapted to parcel maturity, either manual or mechanical, to preserve grape quality and aromatic precision.
Winemaking
100% destemmed, with a pre-fermentation cold maceration (4 to 5 days), followed by regular pump-overs and punch-downs. Total vatting lasts 10 to 15 days for optimal extraction.
Ageing
Aged in oak barrels for 9 months, including 40% new oak, to enhance structure and aromatic depth.

Tasting
In the glass, this wine reveals a deep ruby-purple color with violet reflections. The nose bursts with aromas of blackberry, blueberry, redcurrant, cherry pit, and ripe plum. With time, it develops a wilder, more animal character, evolving toward leather, dark chocolate, and black pepper. On the palate, it offers a round texture, a firm yet delicate structure, and a concentrated fruit expression.

Food pairings
A noble representative of the Côte de Beaune, this wine pairs beautifully with wild meats thanks to its dense, robust tannins. It is a natural match for game—furred or feathered—whether braised or roasted. Beef steaks, lamb, or poultry in rich sauces (civet) also benefit from its firm structure and concentrated aromas. It also shines alongside full-flavored cheeses such as Époisses, Langres, Soumaintrain, or even aged Comté.
