Presentation

"Best of Both Worlds" is the combination of the most iconic grape varieties: 65% Chardonnay - 35% Sauvignon Blanc. Badet Clément proves to be an atypical company, which has naturally combined the technical expertise of the Old World with the marketing approach of the New World and has combined Burgundian culture with the incomparable diversity of Languedoc.

Terroir

This blend of Chardonnay-Sauvignon from Pays d'Oc comes from grapes grown in various terroirs that bring richness and balance to this wine. The Sauvignon Blanc comes from both the terroirs of Languedoc, with their Mediterranean influence that gives freshness and liveliness, and from Gers, offering a subtle touch of acidity. The Chardonnay, on the other hand, is entirely grown in Languedoc, benefiting from limestone soils and generous sunshine, bringing roundness and complexity to the whole.

Winemaking

The vinification of this "Best of Both Worlds" blend is done in two distinct steps. The Sauvignon Blanc is mechanically harvested at night to preserve freshness, then pressed directly, with cold settling before fermentation in tank at 16°C. It is then aged on fine lees for 3 to 4 months. The Chardonnay, on the other hand, is harvested early in the morning to maintain freshness. After cold settling, fermentation takes place mostly in oak barrels, with a small portion in tank at 18°C. Aging continues on fine lees, in barrels, for 4 to 6 months, bringing complexity and roundness to the blend.

Tasting

This blend of Chardonnay-Sauvignon from Pays d'Oc stands out with its pale yellow color and green reflections. The aromatic expression is remarkable, with fruity notes of William pear from the Chardonnay, subtly complemented by woody nuances of hazelnut and praline, as well as the vegetal freshness of Sauvignon, evoking boxwood, tomato leaf, blackcurrant bud, and hints of citrusy lemon. On the palate, the fullness of Chardonnay is perfectly balanced by the liveliness and freshness of Sauvignon. The finish is long and bright, reminiscent of a citrus meringue tart, with nuances of lemon and pink grapefruit. A perfect harmony for this

Food pairings

To be enjoyed as an aperitif, with tapas, sushi, chicken nuggets, or a matcha tea panna cotta. Serve at 12°C.
