Terroir

This rosé is born on the clay-limestone plateau overlooking the Thau pond, bathed in sea breezes and Southern light. An ideal terroir for producing grapes that are both ripe and balanced, where the natural freshness and minerality of the soil result in tense, saline, and expressive wines. A privileged environment for rosés that are both flavorful and precise.

Winemaking

After a complete destemming, the grapes are pressed directly in order to preserve the delicacy of the aromas. Fermentation takes place at low temperature to maintain all the freshness and precision of the fruit.

Ageing

The 5 to 6 month aging in stainless steel tanks enhances the aromatic purity and freshness of the wine. Meticulous work for a clear and expressive rosé.

Tasting

Bright coral dress. The nose expresses itself intensely with floral notes, small red fruits, and a discreet minerality. On the palate, the balance is perfect between freshness and roundness. Aromas of redcurrant, raspberry, and a hint of lemon stretch out into a tense, saline, and gourmet finish. A vibrant rosé, both straightforward, fruity, and refreshing. To be enjoyed young to fully appreciate its freshness and fruity brightness. It can be kept for 2 to 3 years for those who prefer more mellow rosés, without losing its liveliness.

Food pairings

Perfect for sunny days, this rosé is perfect for an aperitif or with light and sunny dishes. It pairs well with shrimp and avocado salad, Lebanese tabbouleh, grilled vegetable skewers, or salmon tartare. It also works wonders with a tomato tart or Mediterranean antipasti. A wine for immediate pleasure.
