He eschews herbicides and pesticides in favor of sustainable, manual viticulture. In the winery, he employs a gentle, non-interventionist style and subtle oak aging to preserve each wine’s identity. The result: vibrant reds with depth, finesse, and a signature blend of red fruit and spice. A contemporary yet deeply respectful take on Burgundy’s great terroirs.
Location
The Bourgogne Hautes Côtes de Nuits Louis Auguste parcels are located on the higher slopes of the Côte de Nuits, around the village of Chevannes, behind the famous Burgundy vineyards. Planted at higher altitude, these vineyards benefit from a cooler and well ventilated environment. East and south east exposures encourage slow and even ripening of Pinot Noir. This geographical setting naturally balances freshness and maturity. It gives the wine an elegant, precise and terroir driven profile.
Terroir
The terroir is composed of clay limestone soils typical of the Hautes Côtes, generally lighter and more stony than those of the Côte. Limestone brings tension and mineral freshness, while clay adds roundness and charm. Well drained soils encourage deep root systems and consistent water supply. This terroir allows for a pure and honest expression of Pinot Noir, emphasizing aromatic freshness. The resulting wines are supple, balanced and vibrant.
In the vineyard
Vineyard practices at Domaine David Duband follow an organic philosophy focused on respect for nature and living soils. Harvest
Harvesting is carried out entirely by hand to preserve grape integrity. Careful selection is done directly in the vineyard to ensure optimal ripeness. Additional sorting guarantees high quality fruit. Grapes are gently transported to the cellar to maintain freshness. This meticulous harvest process plays an essential role in preserving the wine’s finesse.
Winemaking
Vinification follows a gentle and low intervention approach that respects both fruit and terroir. Fermentations rely on indigenous yeasts to maintain Pinot Noir identity. Extractions are kept moderate to preserve fine and silky tannins.
Ageing
Ageing takes place in oak barrels for approximately 10 to 12 months, with very limited use of new oak. This ageing period allows the wine to refine while maintaining brightness and freshness.
