Presentation

Located in Meursault, at the heart of the Côte de Beaune, Domaine Robert Ampeau & Fils is the legacy of several generations of winemakers devoted to tradition and the authenticity of Burgundy’s great terroirs. Founded in the early 20th century and structured by the emblematic Robert Ampeau, the estate is now led by his son Michel, who continues the family’s savoir-faire with the same unwavering commitment.
The domaine cultivates 9.3 hectares across a remarkable mosaic of appellations, both white and red. Its white wines hail from prestigious crus such as Meursault, Meursault Premier Cru, Puligny-Montrachet Premier Cru, and Blagny Premier Cru. On the red side, the domaine produces elegant wines from Volnay Premier Cru, Pommard, Beaune, Savigny-lès-Beaune, and Auxey-Duresses, among others.
A pioneer in adopting environmentally conscious practices, the domaine was one of the first in Burgundy to introduce cover cropping between vine rows anticipating the importance of water management and biological soil balance. In the cellar, winemaking remains firmly traditional: hand-harvesting, full destemming, fermentation in concrete vats, and ageing in older oak barrels for about ten months, with minimal use of new wood.
What truly sets Domaine Ampeau apart is its unique philosophy of time: wines are only released after long ageing in the domaine’s cellars often several decades and only when deemed to have reached optimal maturity. This rare and demanding approach brings exceptional structure, complexity, and harmony to the wines.
The reds are supple, full-bodied, and beautifully balanced, with refined tannins, remarkable aromatic complexity, and lingering depth. The whites are pure and intense, combining energy, elegance, and a faithful expression of each terroir’s identity.

Location

Volnay AOP, red wines made exclusively from Pinot Noir, grown in the Côte de Beaune on terroirs renowned for their finesse. Domaine Robert Ampeau crafts its Volnay with a patient and exacting approach, releasing the wines only after extended ageing in bottle.

Terroir

Soils: Light, shallow clay-limestone resting on a base of hard limestone.
Topography: Gently sloping vineyards, with east to southeast exposure, allowing for gradual, even ripening.
Altitude: Between 230 and 280 meters above sea level.
Specificity: The Volnay terroirs produce wines celebrated for their elegance and subtlety, in contrast to the firmer structure of neighboring Pommard wines.

In the vineyard

Traditional viticulture respectful of natural balances. Short Guyot pruning, controlled grass cover between rows, and light tillage. Harvest is 100% manual, with strict sorting done directly in the vineyard. The focus is on achieving optimal phenolic ripeness, rather than maximizing yield.

Harvest

Manual harvesting in small crates, with meticulous selection of bunches in the vineyard. Grapes are delivered intact to the winery to preserve freshness and avoid oxidation or premature fermentation.

Winemaking

Partial or full destemming depending on the vintage. Fermentation in concrete vats with indigenous yeasts. Long but gentle maceration with regular pump-overs to extract delicately. Malolactic fermentation takes place in oak barrels, fostering natural and precise ageing.

Ageing

Aged 12 to 14 months in oak barrels, with 10 to 20% new wood depending on the vintage’s needs. Minimal bâtonnage to maintain clarity. Light racking to preserve the brightness of the fruit. Bottled without aggressive fining.

Serving

Ideal temperature: 14–15 °C. Decanting is recommended 30 minutes prior to serving, especially for younger vintages or if stored in a cold cellar. Serve in a Burgundy balloon glass to allow full aromatic expression.

Tasting

This Volnay “Les Villages” delights with its bright ruby color, delicate and promising. The nose, classically elegant and refined, offers aromas of fresh cherry, subtle raspberry, and a floral touch—violet and delicate bouquet with a whisper of sweet spice and light forest floor. On the palate, the fruit shines gracefully: fresh, vibrant, supported by silky, well-integrated tannins. The whole is delicate, almost feminine in finesse, finishing on a saline and charming note, full of aromatic tension.

This Volnay, with its subtle structure and refined expression, forms delicate pairings with elegant cuisine. Perfect with pan-seared sea bream with herbs, poultry ballotine with mushrooms, or veal in light morel cream sauce. For a refined vegetarian match, consider spring vegetable risotto or a delicate spinach and goat cheese quiche. On the cheese board, opt for a slightly aged Brillat-Savarin or Chaource, whose creamy texture echoes the wine’s fruity finesse.
