Presentation
Located in the heart of Savigny-lès-Beaune, this family estate dates back over five centuries. Brothers Philippe and Jean-Jacques Girard, heirs to ancestral know-how, each developed their own estate. Today, Arnaud Girard, Philippe's son, takes over. The estate spans 11 hectares, practicing sustainable viticulture, with a distribution of 60% whites and 40% reds, on prestigious appellations: Savigny-lès-Beaune, Pernand-Vergelesses, Aloxe-Corton, Nuits-Saint-Georges, Pommard, and Volnay. Vinifications respect the vintage, with careful aging in oak barrels, offering elegant wines with great aging potential. Its distinctive feature? Rigorous family transmission and precise vinification that honor the terroirs of the Côte de Beaune.

In the vineyard
The vineyard is managed with precision: soils are lightly tilled to promote drainage and microbial life, while foliage and yield are carefully controlled to optimize ripening and aromatic complexity. Depending on plot conditions and maturity, the harvest is performed manually or mechanically.
Winemaking
100% destemmed, with a 4 to 5-day pre-fermentation cold maceration. Extraction via pump-overs and punch-downs. Total vatting time ranges from 10 to 15 days.
Ageing
Aged in oak barrels for 10 to 11 months, including 20% new oak, to support the structure without overshadowing the fruit

Tasting
This expressive wine surprises with its solid structure and vibrant fruit. The bouquet opens with black (blackcurrant, blackberry) and red fruits (black cherry), licorice, lilac, and rose petal. As it evolves, it leans into notes of cooked fruit, half kirsch, half pepper. On the palate, the tannins respect the fruit and give lift to the structure. A few years in the cellar will soften the grip and bring depth. The subtle tightening on the finish is a sign of aromatic persistence and tension.
Food pairings
An ideal match for roasted or sauced poultry. Also excellent with offal—liver, sweetbreads, kidneys—whether pan-seared or in sauce. Creamy meat or poultry-based risottos and pasta will also help round out the wine’s slightly firm tannins with their richness.
