Presentation

Located in Provence, in Vidauban, Domaine Des Feraud is an emblematic property of the region, specializing in the production of elegant and structured rosé wines. With a vineyard of 25 hectares, the estate benefits from a terroir of sands and rolled pebbles, giving its wines great finesse and beautiful minerality. The vines are cultivated organically, with particular attention to biodiversity and soil preservation. The harvest is done at night to preserve the freshness of the grapes and ensure optimal aromatic expression. The rosés from the estate reveal subtle aromas of citrus, red fruits, and white flowers, with a fresh and balanced palate. A domain that perfectly embodies the elegance of great rosés from Provence.

Winemaking

After a brief skin maceration, we gently press the whole grapes. Fermentation and vinification are guided solely by temperature control heat and cold just like a fine chef would. We then allow our Pur Été to undergo malolactic fermentation, during which malic acid is converted into softer lactic acid. Only after this second fermentation do we bottle the natural wine, with no additives.

Tasting

The wine has an apricot hue with silver highlights. Aromatics begin with ashy notes, followed by fresh citrus that gives way to peachy sweetness. On the palate, it’s full and balanced, with gentle hints of coffee and roast, juicy peach flavors, and a structured, pleasantly persistent finish.

Food pairings

This natural wine pairs beautifully with grilled meats, Mediterranean dishes such as chicken with preserved lemons and thyme, sun-ripened tomatoes with creamy burrata, or a fragrant pissaladière. Its refreshing character complements all types of fresh, mild, unaged cheeses from goat or sheep.
Our Pur Été is also ideal for almost any sweet dessert: a red fruit crumble, strawberry coupe, rhubarb tart, raspberry Tropezienne verrine, or simply a piece of salted-butter caramel milk chocolate.
