Winemaking
Whole-cluster pressing is long and delicate, allowing for a gentle extraction of the finest juice. After cold static settling, the musts are directly transferred to oak barrels (20% new) and amphorae (15%) for fermentation.

Aged on full lees for 9 months to enhance texture and aromatic complexity.
