Terroir

Originating from a gently sloping clay-limestone plateau bordering the Thau lagoon, this terroir stands out for its richness in quartz pebbles. This well-draining soil, combined with marine influences, promotes a slow and even ripening of the grapes, ideal for the aromatic expression of Chardonnay and the texture of Viognier. An environment conducive to expressive, balanced, and structured white wines.

Winemaking

The grapes, 100% destemmed, undergo a skin maceration of 10 to 12 hours in a refrigerated tank, promoting aroma extraction without losing finesse. Gentle pressing, followed by fermentation at a controlled temperature to preserve the purity of the fruit.

Ageing

A breeding of 4 to 5 months in stainless steel tanks allows to preserve the balance between richness, freshness, and varietal expression.

Viognier : 40%

Tasting

Pale gold robe, shining. The nose immediately charms with its intensity, mixing ripe apricot, juicy pear, and white flowers. In the mouth, the balance is subtle between fullness and freshness, with a round texture carried by delicate floral notes. The finish reveals a beautiful density, punctuated by touches of exotic fruits and a fine tension. A generous, expressive, and elegant white. To be enjoyed from today to benefit from its aromatic intensity and silky texture. It can also be kept for 2 to 3 years to evolve towards rounder and slightly honeyed notes, while maintaining its freshness.

Food pairings

An aromatic and structured white wine that pairs well with both refined aperitifs and delicate dishes. Enjoy it with shrimp curry in coconut milk, chicken fillet with lemon sauce, or a thin zucchini and fresh goat cheese tart. It also pairs very well with a soft cheese such as a truffled Brillat-Savarin.
