Presentation
Located in the heart of Savigny-lès-Beaune, this family estate dates back over five centuries. Brothers Philippe and Jean-Jacques Girard, heirs to ancestral know-how, each developed their own estate. Today, Arnaud Girard, Philippe's son, takes over. The estate spans 11 hectares, practicing sustainable viticulture, with a distribution of 60% whites and 40% reds, on prestigious appellations: Savigny-lès-Beaune, Pernand-Vergelesses, Aloxe-Corton, Nuits-Saint-Georges, Pommard, and Volnay. Vinifications respect the vintage, with careful aging in oak barrels, offering elegant wines with great aging potential. Its distinctive feature? Rigorous family transmission and precise vinification that honor the terroirs of the Côte de Beaune.

In the vineyard
The vineyard is managed with great precision and respect for the terroir. Soil is lightly tilled to maintain its structure and encourage biodiversity. Foliage is carefully managed to optimize sun exposure and ventilation. Yields are tightly controlled to favor concentration and aromatic finesse. Harvesting is carried out either manually or mechanically, depending on the parcel and vintage.
Winemaking
100% destemmed, followed by a 4 to 5-day cold pre-fermentation maceration. Extraction is done through pump-overs and punch-downs. Vatting lasts 10 to 20 days depending on the vintage.
Ageing
Aged for 10 to 12 months in oak barrels, with 20% to 30% new oak, adding elegance and complexity while preserving fruit purity.

Tasting
Intensity and finesse are expressed with elegant subtlety. In the glass, a vibrant ruby hue glows with brilliant highlights. The bouquet offers hallmark aromas of violet and small red berries (strawberry, raspberry). On the palate, the wine coats the mouth with silky, lace-like texture, refined, delicate, and persistent.

Food pairings
A perfect match for flavorful and sophisticated dishes such as sauced game birds, slow-roasted Bresse capon, or long-roasted lamb. It also pairs beautifully with roasted veal, whose fine texture is delicately enveloped by the wine’s silky yet dense tannins. For cheese, it favors mild, creamy varieties like Brillat-Savarin, Cîteaux, and Vacherin.
