Located in Vosne-Romanée, Domaine Michel Noëllat traces its roots back to the 19th century with Félix Noëllat, a family pioneer. Since then, five generations have succeeded, combining heritage and modernity. The estate's evolution is illustrated by constant investments: in 1980, a vaulted stone cellar was dug under the property, and in 2007, an ultra-modern winery equipped with thermo-regulated stainless steel tanks was established. Since 2012, vineyard management has been handled by Sébastien Noëllat (responsible for viticulture and vinification) and his cousin Sophie, who oversees the commercial side. The vines, cultivated using sustainable practices, cover several prestigious appellations, including Vosne-Romanée, Chambolle-Musigny, and Clos de Vougeot. The reds are aged for 18 months in oak barrels, with meticulous work on extraction and aging. What makes it famous? Powerful and refined wines with a distinctive aromatic signature, blending bright fruit and silky textures.
Location
The village of Fixin lies at the northern end of the Côte de Nuits, just south of Dijon and close to Gevrey-Chambertin. The estate’s vineyards are located on well-exposed slopes between 300 and 350 meters in altitude. These south-east facing parcels benefit from optimal sun exposure for ripening Pinot Noir, while the cooler climate preserves freshness and balance. This geographical setting gives Fixin wines a firm identity, combining structure with vibrant energy.
Terroir
Fixin’s soils are composed of marl-limestone with layers of stones and gravel, encouraging deep root systems and good water retention. The alternation between compact marl and stony layers brings both structure and finesse. These terroirs produce concentrated wines with a tight, vertical profile. Aromatics are often marked by black fruit, sweet spices, and subtle smoky hints, hallmarks of the appellation.
In the vineyard
Domaine Michel Noëllat practices sustainable viticulture, with no herbicides or chemical fertilizers, and works the soils mechanically or manually. Natural cover crops are maintained to support biodiversity. Phytosanitary treatments are used only when necessary. The goal is to support healthy vines and express the terroir authentically, while protecting the vineyard ecosystem.
Harvest
Harvesting is done entirely by hand, with strict sorting in the vineyard. Grapes are collected in small boxes to preserve the berries’ integrity. This rigorous selection ensures top-quality fruit, which is essential for producing elegant wines. Picking dates are carefully adjusted according to phenolic maturity, acidity, and aromatic potential.
Winemaking
Vinification follows traditional Burgundian methods with partial or full destemming depending on the vintage. Native yeasts are used for fermentation in open vats, with controlled punch-downs and pump-overs.
Ageing
Maceration lasts 18 to 21 days, followed by 16 to 18 months of aging in French oak barrels, including about 15% new oak. Aging on fine lees enhances structure and aromatic complexity. Bottling is done with minimal filtration.
