Anchored in Sancerre, Domaine Des Coeuriots specializes in the production of great whites from Sauvignon Blanc, cultivated on clay-limestone and flint terroirs. The vines are managed in sustainable viticulture, with particular attention to soil preservation and biodiversity. Vinifications are done in stainless steel tanks to preserve the purity and freshness of the aromas. The wines stand out for their vivacity, notes of citrus and white flowers, and beautiful minerality that characterizes great Sancerre. Location

The plots selected for the Cuvée Spéciale at Domaine des Coeuriots are located on the best-exposed slopes of the Vézelay region, near the village of Saint-Père in northern Burgundy. Facing south and southeast, they benefit from generous sunlight and natural airflow that ensures optimal ripening. At elevations between 250 and 300 meters, the vineyards enjoy cool nights that preserve acidity and give the wine its signature freshness. This plot selection is designed to express the most concentrated and refined version of the local Chardonnay terroir.

Terroir

The soil consists of shallow clay-limestone over Jurassic marl and hard limestone. These mineral-rich soils ensure excellent drainage while encouraging the vines to root deeply. This leads to greater concentration, natural acidity and aromatic complexity. The resulting Chardonnay is both expressive and balanced, with mineral tension and roundness in perfect harmony. It reveals a focused palate with clarity and persistence, highlighting the energy of this distinctive northern Burgundy terroir.

In the vineyard

The vineyard is farmed according to certified organic principles, with thoughtful, minimal intervention. No herbicides or synthetic products are used. Soils are tilled mechanically, cover crops are controlled, and all work in the vineyard is based on observation of the vine and seasonal conditions. This cuvée is made from rigorously selected grapes, with moderate yields, full maturity and careful handling. The domaine’s philosophy is to let each vintage and terroir speak for itself, with minimal manipulation in the cellar.

Harvest

Grapes are harvested by hand and sorted carefully in the vineyard. Whole bunches are gently and slowly pressed to obtain pure, aromatic juice.

Winemaking

Fermentation occurs naturally in stainless steel tanks using indigenous yeasts.

Ageing

The wine is aged for around 12 months on fine lees without bâtonnage, to gain texture while preserving freshness. A small portion may be aged in neutral oak barrels for added complexity. Bottling is done without fining or heavy filtration, allowing the wine’s balance and identity to shine through.

Tasting

On the palate, the Cuvée Spéciale shows a bright pale gold color. The nose is refined and expressive, with notes of ripe white fruits, acacia blossom, citrus zest and a hint of chalky minerality. The palate opens round and full, with vibrant acidity providing balance. Flavors of pear, candied lemon and fresh hazelnut unfold, leading to a long, mineral and saline finish. This is a structured, elegant wine that can be enjoyed young for its precision or after a few years for greater depth.

Food pairings

This wine pairs beautifully with seasonal, ingredient-driven cuisine. It elevates pan-seared pike-perch with lemon butter, green asparagus risotto with parmesan, or a caramelized onion tart with fresh goat cheese. On the sweet side, it complements a lemon verbena cream, a soft pear cake or an apricot frangipane tart.
