Presentation
The name "Petit Bois" is inspired by the richness and diversity found in a primary forest, where each tree, unique in its kind, contributes to the harmony of the whole. Just as this forest harbors a variety of tree species, our range of "Petit Bois" wines brings together a multitude of single grape varieties from Pays d'Oc, each expressing its own character. Like a tree in the forest, each wine brings its uniqueness, creating a collection of wines as diverse as it is authentic, reflecting the richness of our terroir.
Terroir
The grapes in this blend come from four different terroirs: the plain of the Hérault, which gives the wine its roundness and fruity aromas; the Gard and the Aude Valley, which add complexity to the whole; and finally, the East Aude, a cooler region, where the grapes bring a touch of liveliness and freshness to the wine.
Winemaking
The harvest is carried out early in the morning to preserve the freshness of the grapes. A brief skin maceration of a few hours is carried out before pressing. Alcoholic fermentation, conducted at low temperature (15°-18°C) in stainless steel tanks, helps to preserve the freshness and aromatic intensity of the fruit. The aging on fine lees is intentionally short, before an early bottling that captures all the freshness and aromatic richness of the wine.
