Presentation
Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont, Domaine Chantal Lescure is a family-owned estate that today cultivates 19 hectares of vineyards, stretching from the slopes of Dijon in the north down to Meursault in the south.
In 1996, following the sad passing of Chantal Lescure, her children took over the estate. Aymeric and Thibault Machard de Gramont joined forces and entrusted the technical direction to François Chaveriat. This marked a radical rethink of previous practices and the beginning of a vast transformation.
From 1997 onwards, the decision was made to abandon chemical treatments so that the soils could come back to life and the grapes fully express the quality of their terroirs. The vineyard has since been entirely cultivated under organic farming, officially certified since 2006.
At the same time, the distribution network was restructured and rebuilt. Today, the reputation of Domaine Chantal Lescure is firmly established.
Location
Les Vaumuriens is located in Pommard on the Côte de Beaune, an area known for characterful Pinot Noir. The hillside position improves drainage and helps the vine find balance. The bright exposure supports full ripeness while preserving freshness when picking is well timed. Regular airflow helps keep grapes healthy and precise. The wine is naturally built with real palate hold, made for the table. It expresses an authentic Pommard, structured yet never rustic.
Terroir
Clay limestone soils shape Pommard’s depth and signature structure. Clay brings body and mid palate richness, while limestone adds tension and refines texture. Tannins are present with a tight grain and soften with time. Aromas suggest black cherry, blackberry and plum, with gentle spice and sometimes a hint of liquorice. A mineral line keeps the finish straight and long. Deep and built, this terroir becomes more harmonious with age.
In the vineyard
Domaine Chantal Lescure is organically farmed with careful plot by plot attention. Soils are nurtured to stay alive and encourage deep rooting. Canopy management protects the fruit and preserves Pinot Noir freshness. Yields are controlled to favour skin quality and aromatic precision. Interventions remain measured to let the place speak. This discipline shows in purer fruit and finer tannin grain.
Harvest
Harvest targets the right ripeness, keeping bright fruit and fully mature tannins. Picking decisions are guided by berry tasting, overall balance and grape health. Grapes are handled carefully to limit crushing and preserve freshness. Sorting keeps only healthy, even bunches. This rigour delivers clean juice and precise expression. It is key to the wine’s finesse and structure.
Winemaking
Fermentation is gentle and long, conducted in stainless steel vats. Punching down is moderate, and vatting lasts 18 to 25 days.
Ageing
The wines are aged on their lees in a cool cellar during 16 to 18 months, in barrels of which 30% are 500-litre new oak. Racking is carried out by gravity one month before bottling, without filtration.

Tasting
The colour is deep, bright ruby. The nose combines dark berries, black cherry and gentle spice, with a hint of woodland notes as it evolves. On the palate, the attack is clear and the texture is dense yet balanced. Tannins are firm and fine with a tight grain that gradually softens. Freshness supports length and avoids heaviness. A structured, delicious Pommard with real ageing potential.
Food pairings
Les Vaumuriens loves slow cooked dishes and roasted meats that match its structure. Try boeuf bourguignon, or herb roasted rack of lamb, or roast pigeon with a reduced jus. On the sweet side, it can work with spiced poached pear, or a lightly sweetened dark berry tart, or a dark chocolate and cherry dessert. Serve slightly cool to keep the fruit bright. The best matches favour precise seasoning and tender textures.
