Presentation
Created by Gérard's grandfather, Hippolyte Thomas, Domaine Gérard Thomas is located in Saint-Aubin, a winegrowing village in the south of Côte de Beaune, in the heart of the Côte des Blancs. This 12-hectare family estate is now run by Gérard Thomas and his two daughters, Anne-Sophie and Isabelle, who represent the fourth generation. The vineyard, mainly planted with Chardonnay, extends over the communes of Saint-Aubin, Meursault, Puligny-Montrachet and Chassagne-Montrachet, and produces a wide range of great white wines.
Terroir
The vines are often planted on marl-rich clay-limestone soils, which favor expressive, structured white wines.
In the vineyard
Key vineyard practices include canopy management, precise treatments, and soil care tailored to the mineral-rich soils.
Harvest
Manual harvest.
Winemaking
Whole-cluster pressing using a pneumatic press. Both alcoholic and malolactic fermentations take place in oak barrels (20% new). Bâtonnage (lees stirring) is performed from November to March. After 10 months, the wine is racked, fined with bentonite clay for three weeks, filtered, and then bottled by the estate.
Ageing
10 months in oak barrels, with 20% new oak.
Varietal
Chardonnay : 100%
