Harvest

The grape harvest is mechanical.

Winemaking

The vinification of our rosé is based on a meticulous technical approach, aiming to preserve the freshness and clarity of the aromas while ensuring a delicate color. Direct and rapid pressing is carried out immediately after the grapes are harvested, in order to avoid excessive extraction of color. This method allows for obtaining a pale pink hue.
The must clarification is done by flotation, a process that ensures a quick and efficient separation of solid particles, leaving a very clear juice. This juice is then vinified with the same care as a white wine, under strictly controlled temperatures between 15°C and 18°C. This low-temperature fermentation phase promotes the preservation of fruity aromas and the freshness of the wine. An early racking is carried out to quickly clarify

Ageing

The tank breeding then continues for a few months, but this period is intentionally short in order to preserve all the liveliness and fresh fruit aromas of the rosé.
