Presentation

Located in the heart of Rully, in the Côte Chalonnaise, Domaine Jacques Dury was founded in 1955, evolving from a mixed farming estate into a dedicated and passionate winegrowing domaine. Today, the third and fourth generations of the family—Hervé and Rémi Dury—are at the helm, with Rémi named Young Winemaker of the Year for the Côte Chalonnaise in 2023. The estate covers around 16 hectares, primarily on the limestone and marl-rich soils of southern Rully, enjoying an ideal east-facing exposure that brings a remarkable balance of freshness and precision to the wines. Its range is a true reflection of Burgundy’s identity: white wines of great finesse, such as the renowned Rully Premier Cru Meix Cadot, Margotés, and Montmorin, crafted from vines sometimes over a century old (planted in 1945–46); and refined red wines from Pinot Noir grown on predominantly red clay soils. Guided by a strong family vision and an unwavering commitment to quality, Domaine Jacques Dury perfectly embodies the harmonious union of tradition and modernity, producing wines that are elegant, structured, and marked by a distinctive minerality.

Location

The Rully Premier Cru "Margotés" Blanc from Domaine Jacques Dury represents one of the most refined expressions of Chardonnay from the Côte Chalonnaise. It is sourced from the prestigious Margotés climat.

Terroir

As one of Rully’s most renowned Premier Crus, this wine comes from deep, well-exposed clay-limestone soils, ensuring optimal grape ripeness and delivering natural elegance and tension in the final wine.

In the vineyard

The domaine follows meticulous viticultural practices, focusing on expressing the full potential of the terroir and ensuring healthy, balanced fruit. Vineyard work is carried out to promote even ripening and impeccable sanitary quality.

Harvest

The grapes are harvested by hand, allowing for precise bunch selection and optimal ripeness at harvest time.

Winemaking

After harvest, the grapes are gently pressed as whole bunches. Alcoholic fermentation occurs in stainless steel tanks or oak barrels, depending on the parcel, to preserve freshness and finesse.

Ageing

The wine is aged on fine lees, partly in carefully selected older barrels, to build texture and aromatic complexity without overpowering the fruit. This stage typically lasts 10 to 12 months, respecting the purity and elegance of Chardonnay.

Tasting

On the nose, this Margotés blanc offers pure, expressive aromas, combining ripe white fruits (pear, apple) with delicate citrus notes and floral touches. As it evolves, subtler hints of fresh bread or hazelnut may emerge, reflecting the finesse of its barrel ageing.
On the palate, the attack is clean and crystalline, evolving into a wine of ample breadth, balancing freshness, tension, and a delicately creamy texture. The finish is long, saline, and marked by an elegant minerality that gracefully prolongs the flavors.

Food pairings

With its mineral tension, aromatic finesse, and elegant structure, this Rully Premier Cru blanc naturally complements refined, precision-driven cuisine. It pairs beautifully with noble shellfish, such as seared scallops or oysters in lemon gelée, as well as with delicately prepared white fish (sole meunière, roasted sea bass, turbot in light cream sauce).
On land, it shines with asparagus risotto, Bresse chicken in morel sauce, or tender veal in a light blanquette. On the cheese board, it enhances aged Comté, Beaufort, or fresh goat cheese with herbal notes. Served well chilled, it’s also an excellent choice to start a meal, accompanying seafood tapas, sturgeon ceviche, or iodized amuse-bouches with elegance.
