Presentation
The "PURE" wine range from the Pays d’Oc embodies the very essence of winemaking tradition. It reflects the purity of its grape varieties, without excessive intervention or artifice. The DNA of these wines is rooted in their authenticity, preserving the natural integrity of the grapes with no overuse of oak or additives. This minimalist approach highlights the richness and diversity of the terroirs, delivering expressive wines where each grape variety fully reveals its unique characteristics.
Terroir
The Syrah grapes come from four distinct terroirs:
- the hillsides of the Orb Valley for complexity and richness.
- the terroir at the foot of the Montagne d'Alaric, in the north of the Corbières, which gives roundness and complexity.
- the clay terroir in the center of the Corbières which brings complexity to the wine thanks to the deep rooting of the vines.
- Finally, the foothills of the Black Mountain which give the wine all its freshness.
Winemaking
The majority of the vintage is produced using the traditional method of the South of France called "la cocotte." At the end of the alcoholic fermentation, the marc is completely submerged. This allows for a slow and gentle extraction of tannins and colored pigments. A small portion of the vintage is aged in oak barrels.

Tasting
The Syrah has a deep color and a syrupy consistency. Its aromas of wild fruits (raspberry, redcurrant, blackcurrant) and flowers (violet) are harmonious. On the palate, this wine is very rich and full-bodied, with a touch of minerality and a long, silky finish of rare complexity, with a beautiful persistent note of licorice.
Food pairings
Serve at 17°C with Mediterranean cuisine, spicy dishes, meats in sauce, game, or charcuterie.
