Presentation
Domaine Rollin Père & Fils has been established in the heart of the village of Pernand-Vergelesses for 80 years. Each generation has sought to acquire new plots of vines to enhance and expand the family heritage. Rémi Rollin has been at the helm of the business since 2003, supported by his son Simon and daughter-in-law Caroline. Their 14 ha vineyard is spread over 4 Côte de Beaune communes: Pernand-Vergelesses, Aloxe-Corton, Chorey-les-Beaune, Savigny-les-Beaune.
Location
The Premier Cru “Les Fichots” is located on the eastern slope of Pernand-Vergelesses, on the border with the Aloxe-Corton appellation.
Terroir
This climat benefits from an ideal south-eastern exposure and a deep clay-limestone soil rich in iron oxide. This terroir, both sunny and well-drained, gives the wine a solid structure and remarkable aromatic intensity, characteristic of the finest Premier Crus of the Côte de Beaune.
In the vineyard
This wine is made from 100% Pinot Noir. The vines, aged between 40 and 60 years, are cultivated according to sustainable viticulture principles, with meticulous attention paid to soil health, controlled yields, and respect for biodiversity. The soil is worked without herbicides, and treatments are limited to natural products only.
Harvest
Harvesting is done by hand, allowing a strict selection of bunches directly in the vineyard, ensuring both fruit integrity and optimal ripeness.
Winemaking
In the winery, the grapes are fully or partially destemmed, depending on the vintage. Fermentation takes place in open vats, with regular punch-downs and pump-overs to achieve a gentle and gradual extraction of color and tannins. Maceration typically lasts 18 to 20 days. Fermentations are carried out under temperature control, with no use of exogenous yeasts, in order to promote an authentic expression of the terroir.
Ageing
The wine is aged for about 12 to 14 months in French oak barrels, of which 20 to 25% are new, depending on the vintage. The remaining barrels, one to two years old, are carefully selected for their aromatic neutrality. This balanced maturation process allows the wine to develop complexity without masking the pure character of Pinot Noir.
Before bottling, the wine is lightly racked and blended, without fining or heavy filtration, in order to preserve its natural body and balance.

Serving
Serving temperature: 16–17 °C (60–63 °F).
Decant for 30 to 45 minutes if the wine is young. This aeration helps open up the bouquet and reveal the full richness and depth of the terroir.

Tasting
Appearance: Deep ruby color with garnet reflections.
Nose: Intense and refined, with aromas of ripe red fruits (black cherry, raspberry), violet, sweet spices, and subtle smoky notes from barrel aging. With time, it evolves toward complex nuances of forest floor, truffle, and fine leather.
Palate: The attack is broad and silky, supported by noble, well-integrated tannins. The mid-palate shows a beautiful balance of power, freshness, and length, while the persistent and savory finish fully expresses the distinctive character of the Pernand-Vergelesses terroir.
Food pairings
This wine pairs beautifully with grilled or roasted red meats (rib of beef, rack of lamb), game birds such as roasted pigeon or pheasant, and aged cheeses like Saint-Nectaire, Cîteaux, or Époisses. It also makes a superb companion to duck breast with cherry sauce or a traditional boeuf bourguignon.
