Tasting
This Pouilly‑Loché "Au Cœur des Roches" from Famille Trouillet vividly expresses its limestone terroir: pale yellow with golden highlights, it offers a refined nose of white flowers, Granny Smith apple, and candied lemon, accented with mineral and flinty undertones. On the palate, saline tension meshes beautifully with a supple yet structured body: vibrant acidity, creamy texture, and notable length. The finish is pure and brisk, leaving a lasting impression of crisp minerality. A discreetly elegant wine that is both lively and charming.
Food pairings
Powerful and mineral-driven, this Pouilly‑Loché makes an excellent match for refined seafood and structured dishes. It pairs superbly with fine de claire oysters, salt-crusted sea bass or turbot, and sole meunière. For an elegant twist, try scallop ceviche, pan-seared scallops with beurre blanc, or citrus-grilled salmon. It also elevates a wild mushroom risotto and complements aged goat cheeses. Serve chilled (10–12 °C) to fully reveal its fresh, mineral elegance.
