Presentation
One of the main characteristics of Nuits-Saint-Georges’ wines lies in the great diversity of its terroirs, diversity that is found in the different styles of wines that vary greatly depending on where the grapes are grown. Based in Nuits-Saint-Georges, the House of Edouard Delaunay illustrates this multiplicity by offering several selections from Premier Cru climats located both north and south of the village.
Terroir
Perrière meant "quarry" in Old French. As its name would suggest, the soil in “Les Perrières†is lean and stony and the subsoil is composed of white marble that continues to be extracted today. The 45-year-old vines are managed in an ecologically responsible manner. This is a particularly early ripening plot due to the high proportion of limestone rocks that are warmed by the sun and transfer their heat to the soil.
Winemaking
The grapes were handpicked early; this was the first plot to be harvested in the Côte de Nuits. The grapes were carefully sorted at the winery to retain only the finest bunches. The entire harvest was destemmed. Fermentation began under the influence of indigenous yeasts and was supported by daily punch-downs and followed by a period of maceration, bringing the total vatting time to 20 days. Ageing lasted for 15 months in very finely-grained barrels (25% new, very lightly toasted oak from Central France’s forests).

Tasting
Beautiful deep, almost black colour tinged with purplish blue. The intense nose is redolent of wild berries and pastries (cherry, raspberry, blackcurrant, fruit sabayon, fruit jellies). Nice ripeness is complemented by floral scents (iris). Richer aromas such as beeswax then surface, evolving toward toasted notes of tobacco, mocha coffee and Black Forest cake. Stupendous start to the palate, which is full and complex, featuring nice minty freshness and lovely acidity. Notes of Mexican orange blossom then surface. Robust with superbly integrated oak. This powerful yet fresh wine is destined for laying down and will reach its full potential over time.
Food pairings
Sublime with steak tartare, red tuna tataki or veal chop with rosemary.
