Presentation
The "PURE" wine range from the Pays d’Oc embodies the very essence of winemaking tradition. It reflects the purity of its grape varieties, without excessive intervention or artifice. The DNA of these wines is rooted in their authenticity, preserving the natural integrity of the grapes with no overuse of oak or additives. This minimalist approach highlights the richness and diversity of the terroirs, delivering expressive wines where each grape variety fully reveals its unique characteristics.
Terroir
The grapes come from four meticulously selected terroirs:
- the surroundings of Narbonne for the richness and opulence of the wine,
- the plain of Aude for the length and structure,
- the hillsides of the Orb valley for velvety tannins, richness, and complexity,
- and finally, the west of Aude under the influence of the ocean, where freshness dominates.
Subtle blends allow the cuvées from these four terroirs to produce an elegant and complex wine, with a beautiful velvety texture and a nice length on the palate.
Winemaking
The grapes are fully destemmed. The maceration, temperature-controlled, is long and includes several pump-overs.
Ageing
After malolactic fermentation, the wine is aged in tanks for about 6 months. A small part of the blend is aged in oak barrels.

Tasting
The Cabernet Sauvignon, with its beautiful deep red color, reveals aromas of red fruits (blackcurrant, strawberry) combined with a refreshing and slightly green note (fresh pepper, typical of the grape variety) and spicy flavors (cinnamon, mint, honey). The finish is subtly woody (aromas of cedar, oak, and nuts). The tannins are soft and silky.
Food pairings
Serve at 17 - 18°C with traditional dishes such as shepherd's pie, gratins, beef and vegetable stews, grills, or rack of lamb.
