Presentation
Volnay’s red wines, renowned for their unique alliance of depth and finesse, subtlety and a silky, velvety palate, are among Burgundy’s finest. They have always been among the favourites of the Delaunay family. Succeeding in crafting and presenting a beautiful Volnay, imbued with all of the qualities of its appellation, was a task that the House of Edouard Delaunay could not pass up the opportunity to undertake.
Terroir
Volnay’s fame dates far back in time. In 1666, Claude Bouchu, Louis XIV’s intendant, recommended what he considered "the best wine in Burgundy" to the king. Perched high up in the Côte de Beaune (between 230 and 280 metres in altitude), Volnay is adjacent to hill of Chaignot. The appellation is surrounded by the villages of Meursault, Pommard and Monthélie. The vines are located on the heights of Volnay and grow in deep, rich soil that is composed of limestone, clay, silt and red marls, lending minerality and finesse to the wine.
Winemaking
Always reaching optimal ripeness, this appellation is the first to be harvested at Edouard Delaunay! The grapes are harvested by hand. They are fully destemmed and vinified with gentle daily pump-overs and mid-fermentation punch-downs. The vatting lasts 14 days, including 3 days of cold pre-fermentation maceration. Ageing takes place in oak barrels sourced from the forests of Central France (25% new oak) and lasts for 15 months.

Tasting
Beautiful deep red colour with garnet highlights, immediately suggesting both density and concentration. The nose is noble and expressive, opening with earthy forest scents, soon joined by ripe red fruit notes (cherry). Subtle spicy nuances follow (cinnamon, cumin, grey pepper), along with a distinctive note of cherry tree resin. The palate opens with freshness and precision, balanced right away by a delicate sweetness that reflects perfect ripeness. Warm aromas dominate, with dark chocolate and nutmeg taking centre stage. The structure is well-defined, supported by ripe tannins that are still slightly present but will soften with time. A great Volnay, thoroughly typical of its appellation.
Food pairings
Superb with couscous or tajine. On the cheese side, it will enhance a Brie, a Reblochon or a Camembert.
