Presentation
Located in Fixin, in Côte de Nuits, Domaine Du Clos Saint Louis is a family estate that exploits parcels on prestigious climates, benefiting from iron-rich limestone soils. Practicing sustainable viticulture, the estate relies on exclusively manual harvesting and traditional vinifications in open tanks to preserve the natural elegance of Pinot Noir. Aging in oak barrels, with a measured proportion of new wood, brings remarkable depth without masking the purity of the fruit. The reds from the estate offer a fine tannic structure, aromas of black cherry, undergrowth, and spices, with a silky palate and beautiful persistence. An essential reference for lovers of Fixin and great Burgundy wines tailored for aging.
Terroir
Located at the northern gateway of the Côte de Nuits, the Fixin appellation is shaped by clay-limestone soils mixed with scree from the surrounding hillsides. These well-draining soils, combined with predominantly east and southeast exposures, allow for slow, even ripening of the Pinot Noir grapes. The continental Burgundy climate—marked by cold winters and warm summers moderated by hillside breezes—preserves natural acidity while enabling optimal phenolic maturity. This terroir gives the wine its distinctive structure, mineral tension, and refined depth, faithfully reflecting the character of Fixin.
In the vineyard
The vineyard is managed with careful attention to soil vitality and controlled yields to enhance concentration and precision. Canopy management techniques such as pruning, debudding, and selective leaf thinning promote optimal sunlight exposure and airflow around the clusters. Pinot Noir, the emblematic grape variety of the Côte de Nuits, thrives in these limestone-rich soils, developing aromatic intensity and structural elegance. Every viticultural decision aims to preserve the authenticity of the terroir while achieving balance between fruit expression and natural freshness.
Harvest
Harvesting is carried out at optimal ripeness, typically by hand to ensure meticulous grape selection. A strict sorting process retains only perfectly healthy and ripe berries. The harvest date is carefully determined to maintain the balance between acidity and phenolic maturity, a key factor in crafting a wine that combines vibrancy with depth. This precision at harvest underpins the purity and structure of the final cuvée.
Winemaking
Winemaking focuses on gentle, progressive extraction to reveal the finesse of Pinot Noir without overpowering its natural tannic framework. Depending on the vintage, partial or total destemming may be applied. Fermentation takes place in temperature-controlled vats, with carefully managed punch-downs and pump-overs to extract color, aroma, and structure with precision. This approach results in a wine that is expressive, structured, and true to its appellation, where ripe fruit and subtle spice integrate harmoniously.
Ageing
The wine is aged in French oak barrels for several months, with a moderate proportion of new oak to preserve the wine’s aromatic purity. Oak aging enhances texture and complexity while refining the tannins and supporting aging potential. Over time, delicate notes of undergrowth, licorice, and sweet spices emerge, complementing the core of red and black fruit without overshadowing the varietal character.

The nose reveals intense aromas of ripe red fruits such as cherry and raspberry, layered with blackcurrant, subtle floral nuances, and gentle spice. With aeration, hints of forest floor and licorice develop. On the palate, the attack is precise and structured, with firm yet refined tannins supported by vibrant mineral freshness typical of Fixin’s limestone soils. The finish is persistent, slightly spicy, and indicative of promising aging potential.

Its balanced tannins and freshness also make it an excellent match for grilled veal chop or mushroom risotto.
