Presentation

Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont, Domaine Chantal Lescure is a family-owned estate that today cultivates 19 hectares of vineyards, stretching from the slopes of Dijon in the north down to Meursault in the south.
In 1996, following the sad passing of Chantal Lescure, her children took over the estate. Aymeric and Thibault Machard de Gramont joined forces and entrusted the technical direction to François Chaveriat. This marked a radical rethink of previous practices and the beginning of a vast transformation.
From 1997 onwards, the decision was made to abandon chemical treatments so that the soils could come back to life and the grapes fully express the quality of their terroirs. The vineyard has since been entirely cultivated under organic farming, officially certified since 2006.
At the same time, the distribution network was restructured and rebuilt. Today, the reputation of Domaine Chantal Lescure is firmly established.

Location

These old vines are planted on a 1-hectare plot, located on the southern side of Pommard (Volnay) at the foot of the slopes. The younger vines from this terroir are vinified separately and make up the “Pommard 1er Cru” cuvée.

Brown limestone soil over hard limestone and scree.

In the vineyard

Key vineyard practices include soil management, sustainable cultivation, yield control, and manual harvesting to ensure optimal fruit quality.

Harvest

The harvest is carried out by hand. Grapes are sorted, destemmed, and not crushed. A pre-fermentation maceration is carried out to encourage the development of indigenous yeasts.

Winemaking

Fermentation is gentle and long, conducted in stainless steel vats. Moderate punching down is carried out, and vatting lasts 18 to 25 days.

Ageing

The wines are aged on their lees in a cool cellar, in 228L and 500L barrels (30% to 50% new oak). Racking takes place after 18 months, followed by bottling without filtration.

Tasting

Deep ruby color. A distinguished nose with aromas of dark fruits. On the palate, the wine is rich, silky, complex, and refined, with a long finish.

Food pairings

A wine for ageing, to be enjoyed with beef steak, lamb, stews, game, ribeye, as well as cheeses such as Époisses or Comté.
