Presentation
Located in Premeaux-Prissey, in the heart of the Côte de Nuits, Domaine Truchetet spans 7 hectares and has been managed since 2019 by Morgan and Julie Truchetet, accompanied by Pauline Genot. From the start, the estate was converted to organic farming, obtaining certification in 2023. The vineyard includes many centenary old vines, maintained with an ecological and sustainable approach. Practices include the use of fresh plant preparations (dandelion, nettle, horsetail), the establishment of cover crops to preserve soil microbial life, and high trellising favoring photosynthesis and protection against water stress. The wines are vinified in infusion mode, minimizing extraction to obtain silky and elegant tannins. The reds express beautiful freshness and precise structure, revealing all the typicity of the Nuits-Saint-Georges and Auxey-Duresses terroirs. The estate stands out for its very precise vineyard management approach, with innovative and natural techniques to preserve soil balance and maximize grape quality.
Location
The Fleur de Pinot cuvée comes from parcels around Premeaux-Prissey, in the southern part of the Côte de Nuits. These vineyards are located on well-exposed slopes and foothills, benefiting from moderate sunshine and natural drainage. The old vines selected for this cuvée grow on historic Burgundian terroirs, carefully chosen to deliver a pure and graceful expression of Pinot Noir.
Terroir
The soils are primarily composed of marl and clay-limestone, with pockets of gravel and silt. This geological diversity supports slow ripening and enhances aromatic finesse. The terroir gives the wine a soft structure, natural freshness, and subtle complexity that elevates it beyond a typical regional Burgundy.
In the vineyard
The Domaine has been certified organic since 2023. Vineyard practices focus on soil life, natural rhythms, and minimal intervention. No herbicides or synthetic products are used, and all vine work is manual, including green harvest and leaf thinning, to ensure optimal fruit quality.
Harvest
Grapes are harvested by hand, carefully sorted in the vineyard and again on sorting tables at the winery. This precision ensures only the healthiest, ripest grapes are used, laying the foundation for a natural and balanced vinification.
Winemaking
This wine is produced without any added sulfur, including at bottling. Grapes are harvested by hand, with an initial sorting in the vineyard followed by a second, meticulous sorting on a vibrating table at the winery. The entire harvest is destemmed before being placed in tanks. After a few days of cold maceration, alcoholic fermentation begins in the traditional way, using only indigenous yeasts. Extraction is gentle, with very few punch-downs and moderate pump-overs. The estate is also developing infusion-style vinifications: no punch-downs, no pump-overs — fermentation takes place solely in juice, to preserve the aromatic finesse of Pinot Noir. Once fermentation is complete, the wine is racked and gently pressed.
Ageing
The wine is then aged for about 12 months in French oak barrels, with a moderate amount of new oak, adding complexity without overpowering the wine’s finesse.

Tasting
With “Fleur de Pinot,” Domaine Truchetet presents a sulfur-free cuvée that is both sincere and expressive, deeply rooted in the varietal identity. Its bright, pale red hue hints at a lively, fruit-forward palate. The nose opens with a basket of fresh red fruits, crunchy cherry, raspberry, redcurrant, uplifted by light floral notes and a delicate, almost infused vegetal nuance. On the palate, the texture is fluid and airy, supported by a vibrant natural acidity. The absence of sulfur enhances the purity and honesty of the aromatics, offering a vibrant, delicious wine with a clean, refreshing finish.
Food pairings
Perfect for fresh and spontaneous cuisine, this sulfur-free cuvée pairs beautifully with simple yet flavorful dishes. It complements a Mediterranean vegetable tian, where the sunny notes harmonize with the wine’s brightness. With sushi or a salmon chirashi, its tension and purity enhance the delicate umami of raw fish. For something more comforting, pair it with herb-roasted chicken or a grilled vegetable and ricotta pizza. For vegetarian pairings, homemade falafel with lemony yogurt sauce works wonders, highlighting the wine’s lightness and fruit.
