Family property since 1938, Domaine Xavier & Guillemette BESSON is located in Givry, in the heart of the Côte Chalonnaise, in a fortified residence dating back to the Middle Ages. The magnificent cellar with ribbed vault is classified as a historical monument and hosts concerts every summer as part of the "Les Musicaves" festival. From 1989, Xavier and Guillemette BESSON took over the management of the family estate and focused production on estate-bottled wines. They cultivate 9 hectares of vines in the Givry appellation, red and white, villages and 1er Cru, as well as Beaune red 1er Cru. Great attention is paid to vine

Ageing

After a cold maceration of 3 to 5 days, natural yeasts transform the sugars. Some gentle punch-downs are carried out before the wines are put into barrels, with a proportion of new barrels ranging from 25% to 50%. The aging lasts one year, followed by a winter stay in tanks for the Premier Crus in their 17th-century cellar.
