Presentation
Created in 2000 by the Papillon family, Domaine Papillon-Lavoignat is located in Péronne, between Viré and Clessé, in the heart of the Mâconnais vineyard. Today, the estate covers 19 hectares and is managed by Stéphane Lavoignat, husband of Florence Papillon. The estate stands out for its commitment to environmentally friendly viticulture, favoring sustainable practices and manual interventions. It produces white, red, rosé wines, and Crémants de Bourgogne, highlighting Chardonnay and Gamay, key grape varieties of the Mâconnais. Vinifications are adapted to each vintage, with natural fermentations and controlled aging to preserve freshness and aromatic purity. The standout feature? A varied production, allowing exploration of the richness of the Mâconnais, with a marked identity on each cuvée.

In the vineyard
Currently undergoing organic conversion. Vineyard practices include organic fertilization, natural grass cover, mechanical soil tillage, and single/double Guyot pruning to manage yields and preserve biodiversity.
Harvest
Mechanical harvesting.
Winemaking
Direct pressing followed by rapid cooling of the must in thermoregulated stainless steel tanks (15–16 °C). After settling, both alcoholic and malolactic fermentations occur in stainless steel tanks at a controlled temperature.
Ageing
Aged on fine lees for 6 months in stainless steel, preserving aromatic purity and texture.
