Anchored in Nuits-Saint-Georges, the Domaine Chevillon Chezeaux is a true family heritage, cultivating the vine for several generations. Its commitment to preserving the identity of great Burgundian terroirs is reflected in rigorous and environmentally friendly cultural practices. The vines are cultivated in sustainable viticulture, with meticulous soil work favoring optimal maturity of Pinot Noir. Vinification is traditional, with open tank fermentations and prolonged aging in French oak barrels, bringing beautiful aromatic complexity and great depth to the wines. The wines of the domain reveal all the typicity of Nuits-Saint-Georges: beautiful structure, silky tannins, and aromas of black fruits, licorice, and undergrowth. Location
The Aux Bousselots climat is located at the northern end of the Nuits-Saint-Georges appellation, on the border with Vosne-Romanée. The domaine's vines lie mid-slope, between 240 and 260 metres in altitude, on well-exposed east-facing plots that benefit from morning sun and good natural airflow. This frontier location gives the wine a unique expression, combining the structure typical of Nuits with the floral finesse of Vosne. The surrounding environment, dry-stone walls, natural hedges and living soils, enhances vineyard balance. This privileged geographical setting yields concentrated, balanced grapes suited to crafting wines of real distinction.
Terroir
The soil is composed of brown clay-limestone layered over compact marl and fractured limestone. This shallow but well-drained structure encourages deep root systems and naturally limits vine vigour. As a result, yields are low but grape quality is high. The fruit shows aromatic intensity, fine tannins and natural freshness. Aux Bousselots produces dense yet elegant wines, marked by precise fruit, energy and excellent ageing potential. The terroir imparts character and a refined, mineral signature.
In the vineyard
The estate follows sustainable farming practices, with no herbicides or chemical fertilisers. Soils are worked mechanically, with partial grass cover to encourage biodiversity, prevent erosion and improve soil health. Treatments are minimal and applied only when necessary. Yields are controlled to ensure ripeness and concentration. Each parcel is monitored carefully, with thoughtful, timely interventions aimed at preserving vine health and expressing terroir nuances. This rigorous approach ensures consistent fruit quality year after year.
Harvest
Harvesting is done entirely by hand at full maturity, followed by meticulous sorting in the vineyard and again at the winery. Grapes are partially destemmed depending on the vintage to balance freshness and structure. Gravity-fed vatting avoids excessive extraction and preserves fruit integrity. The focus is on gentle handling to express the terroir’s subtle character without artifice. Old vines and low yields produce grapes of great purity and structure, forming the foundation of the wine’s identity.
Winemaking
Fermentation takes place in open vats with indigenous yeasts, lasting 15 to 18 days, with gentle manual punch-downs.
Ageing
The wine is aged for 18 months in oak barrels, around 30% of which are new. This extended ageing refines the tannins and adds complexity without overshadowing the fruit. No fining is used, and filtration is minimal or skipped depending on the vintage. This careful élevage preserves the character of Aux Bousselots while adding depth and harmony.
