Presentation

Domaine Rollin Père & Fils has been established in the heart of the village of Pernand-Vergelesses for 80 years. Each generation has sought to acquire new plots of vines to enhance and expand the family heritage. Rémi Rollin has been at the helm of the business since 2003, supported by his son Simon and daughter-in-law Caroline. Their 14 ha vineyard is spread over 4 Côte de Beaune communes: Pernand-Vergelesses, Aloxe-Corton, Chorey-les-Beaune, Savigny-les-Beaune.

Location

This cuvée comes from various hillside plots within the appellation.

Terroir

The soils are shallow clay-limestone, resting on white marly limestone subsoil.

In the vineyard

Key stages include tailored treatments, precise soil management, and yield control. The vines are cultivated with care to ensure optimal ripeness and expression of the terroir.

Harvest

Grapes are harvested by hand for the majority of the cuvée.

Winemaking

Grapes are gently pressed to preserve their integrity and aromatic finesse. After a light settling, the must ferments naturally in oak barrels, 10% of which are new. If the vintage calls for it, lees may be stirred (“bâtonnage”) to enrich the wine further.

Ageing

The wine remains on its lees for 10 to 12 months before racking and blending. After a light filtration, bottling is carried out at the estate.
