Location
The Morey Saint Denis Rouge vineyards of Domaine Amiot & Fils are located in the village of Morey Saint Denis, in the heart of the Côte de Nuits. The parcels lie on well exposed slopes between Gevrey Chambertin and Chambolle Musigny. Regular sunlight encourages even ripening. Gentle to moderate slopes ensure effective natural drainage. Mid slope altitude helps preserve freshness while allowing full maturity. Nearby combes promote air circulation. The continental climate provides beneficial temperature variations. This location gives the wine structure and elegance. The expression is typically Morey Saint Denis. Balance between depth and finesse is sought.
Terroir
The terroir is based on clay limestone soils rich in stones from Jurassic formations. Limestone brings tension, precision and minerality. Clay contributes body and structure. Vine roots penetrate deeply, ensuring steady water supply. This combination promotes even ripening. The terroir allows a dense yet elegant expression of Pinot Noir. Minerality supports the aromatic framework. Structure is firm without heaviness. The wine gains depth and complexity. The village identity is consistently expressed.
In the vineyard
Domaine Amiot & Fils follows a reasoned approach to viticulture with respect for soils and the environment. Soil work is prioritised to preserve structure and biological life. Interventions are measured and adapted to each vintage. Inputs are limited and mainly organic. Natural composts are used to nourish the soils. No official certification is claimed. Careful vineyard observation guides technical decisions. Vine health is a constant priority. This approach maintains natural balance. It allows an honest expression of terroir.
Harvest
Harvesting is carried out entirely by hand to preserve grape integrity. Careful sorting is done directly in the vineyard to select the best fruit. Harvest dates are chosen to achieve balance between ripeness and freshness. Grapes are picked at optimal phenolic maturity. Transport to the winery is quick and gentle. This limits oxidation. Manual harvesting allows precise selection. It ensures healthy raw material. Respect for the fruit is essential at this stage. It shapes the finesse of the wine.
Winemaking
Winemaking follows a traditional approach with gentle extraction to preserve elegance. Fermentations are closely monitored to reveal aromatic complexity.
Ageing
Ageing takes place in French oak barrels for approximately 16 to 18 months. The proportion of new oak is around 20 to 25 % depending on the vintage. Oak is used with restraint to support the wine. Ageing refines texture and softens tannins. Time plays a key role in harmony. Wines are released later to ensure integration. This patience results in balanced wines. Depth and elegance are prioritised.
