Presentation

Domaine St Germain is a converted organic winegrowing estate in the Mâconnais region. For the past three years, it has showcased carefully cultivated old vines. The domaine specializes in four emblematic grape varieties: Chardonnay, Gamay, Pinot Noir and Aligoté. This environmentally-friendly approach aims to produce quality wines while preserving biodiversity.

Terroir

A clay-limestone soil.

In the vineyard

Planting density 7500 feet/ha. Grassing between rows. Single Guyot pruning and arcure bending.

Harvest

Machine that allows sorting and destemming of grapes.

Winemaking

Direct pressing of the grapes followed by static settling at -4°C. Barrel filling and fermentation in 500-liter oak barrels.

Ageing

Aging 12 months on fine lees, 100% in 500-liter oak barrels. Monthly stirring throughout the winter.

Tasting

Hazelnut aromas with honeyed, buttery notes nuanced with spices. On the palate, a wine that is aromatic, full-bodied, and deep.
