Presentation
Family property since 1938, Domaine Xavier & Guillemette BESSON is located in Givry, in the heart of the Côte Chalonnaise, in a fortified residence dating back to the Middle Ages. The magnificent cellar with ribbed vaults is classified as a historical monument and hosts concerts every summer as part of the "Les Musicaves" festival. From 1989, Xavier and Guillemette BESSON took over the management of the family estate and focused production on estate-bottled wines. They cultivate 9 hectares of vineyards in the Givry appellation, both red and white, as well as village and 1st Cru wines, and Beaune red 1st Cru. Great

Terroir
The red Givry Le Haut Colombier comes from a plot located on the site called Le Petit Prétan, just in front of the Domaine. Ideally located at the foot of the Givry hillside, it benefits from the sought-after South-East orientation, but also from a rich and fertile soil, because it is deep and clayey, but crossed by veins of limestone rocks. The vineyard is aged from 3 to around 60 years old.

Harvest
Hand picking.
Winemaking
100% destemming. Pre-fermentation cold maceration. Alcoholic fermentation in thermo-regulated stainless steel tanks. Pneumatic pressing.
Ageing
Gravity filling and 12-month aging in barrels, including 25% new barrels. Bottled on the estate.

Tasting
A fresh and elegant wine with red fruit aromas, elegant tannins, and a beautiful structure. Lovely fleshy fruit on velvety tannins.
Food pairings
This wine goes well with pâtés, cured ham, and fine deli meats, but also with meats such as beef steaks, braised veal, chicken in a pot, and roasted Bresse chicken. You can also enjoy it with soft cheeses: Camembert, Brie de Meaux, Reblochon.
