Presentation
For a long time overlooked, the Aligoté grape variety is experiencing a revival thanks to the work of a few passionate winemakers. It is important for Maison Edouard Delaunay to take its place in this renewal. Our Aligoté is a terroir wine, a plot selection from a unique vineyard plot cultivated just a few hundred meters from our winery.
Terroir
This wine comes from a plot of old Aligoté vines planted by Laurent Delaunay's former oenology professor, Professor Feuillat. It is located in close proximity to the Abbey of Saint-Vivant, whose monks created and cultivated the famous Romanée Saint-Vivant in the Middle Ages. This abbey is currently preserved and maintained thanks to a major sponsorship operation in which the Delaunay family, who are very attached to this site, actively participates. Located on the historic hill of Vergy facing the Château de Charmont, this steeply sloping plot is oriented southeast at an altitude between 420 and 450 meters, on soils of very calcareous white earth.
Winemaking
The grapes, hand-picked, were perfectly ripe with a high acidity content as befits this grape variety. After a light pressing of whole clusters, the fermentation started in a stainless steel tank and then the must was transferred to barrels to complete its vinification. The short aging - in barrels of 2, 3, and 4 years old - lasted 6 months, on lees with light, regular stirrings.

Tasting
Very beautiful pale yellow color. The initial nose is marked by strong minerality, offering lovely vegetal notes of spring flowers (daisy, dandelion, acacia, elderflower). Subtle and delicate aromas of barely ripe white pear then emerge. A smoky touch, complemented by green anise, adds complexity. Fresh lemony notes are also present. On the palate, there is excellent tension, with well-integrated acidity. Pleasantly tangy fruit flavors come through (candied lemon, gooseberry, pineapple, passion fruit), along with a hint of bergamot. The finish is saline with great length. This Aligoté, taut, expressive, and airy, is a wine of character.
Food pairings
To be enjoyed as an aperitif, with oysters, Gravlax salmon, or to accompany a platter of Burgundian cheeses.
