Presentation
Based in Fuissé, at the heart of the Mâconnais in southern Burgundy, Domaine JUBARE is dedicated to cultivating the region’s emblematic white grape: Chardonnay. The nearly 6-hectare vineyard stretches across the commune’s diverse terroirs, offering a remarkable variety of exposures and slopes ranging from flat terrain to inclines up to 40%. This geological richness allows the domaine to craft a range of wines that reflect the true identity of southern Burgundy, with each cuvée expressing the nuances of its origin with precision.
Three prestigious appellations shape the estate’s production: Mâcon-Fuissé, Pouilly-Fuissé, and Pouilly-Fuissé Premier Cru. A parcel-by-parcel approach is key: each wine originates from a specific place and soil, in a constant pursuit of balance between freshness, density, and minerality. While discreet in size, Domaine JUBARE embraces an ambitious and exacting vision of winemaking, grounded in authenticity, respect for the living ecosystem, and measured vinification. Without artifice, its wines elegantly reveal the full potential of Chardonnay grown on these clay-limestone slopes, in a landscape shaped by centuries of viticultural tradition.
Location
Domaine Jubare is located in Fuissé, within the Mâconnais (Saône-et-Loire, Burgundy). The vineyard spans approximately 5.84 hectares of Chardonnay, all planted within the commune. The plots benefit from a wide range of slopes and exposures, from flat areas to inclines of up to ~40%. The soils are predominantly clay-limestone, with a Jurassic limestone subsoil characteristic of southern Burgundy — ideal for good drainage and promoting a refined minerality in the wines.
Terroir
In the vineyard
Vineyard work at Domaine Jubare is precise and meticulous, with careful pruning, yield control, and grape sorting. Practices such as cover cropping or soil tillage are used according to parcel needs, particularly on steep slopes to preserve soil life and prevent erosion. Harvest is timed at optimal ripeness, often carried out by hand on hillside plots to ensure top quality. The goal is to balance vine vigor and yield while preserving fruit purity and aromatic precision.
Harvest
Chardonnay grapes are carefully hand-harvested or sorted on arrival at the cellar, depending on the plot and vintage.
Winemaking
Grapes are gently pressed, often as whole clusters or lightly destemmed depending on the parcel, to avoid herbaceous or bitter notes. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, preserving the Chardonnay’s primary aromas (white fruits, flowers, citrus). The domaine works with indigenous yeasts, reinforcing a sense of place. Malolactic fermentation is likely partial or complete, adding roundness while maintaining freshness, adjusted to the character of the vintage.
Ageing
Ageing is primarily done in stainless steel tanks to highlight freshness, fruit purity, and minerality. A moderate proportion may be aged in older oak barrels, enhancing complexity without imparting dominant oaky flavors. The wine is aged on fine lees for several months, building texture and aromatic depth (hints of toasted bread, hazelnut, etc.). Racking is carried out carefully to avoid unwanted aromas, and bottling occurs after sufficient ageing to ensure stability while preserving the wine’s liveliness.
