Terroir
This blended whisky draws its uniqueness from the lands of the United Kingdom, where the distillates come from, and the Black Mountain, in the heart of the French Southwest, whose pure water is used for its reduction. A marriage between Scottish expertise and Occitan terroir, sublimated by aging in Armagnac casks that give it character and elegance.
Winemaking
The Black Mountain n°1 Excellence is a blend of two whiskies: a first one aged 3 years, refined for 12 months in Armagnac casks, and a second one aged 8 years, refined for 6 months in the same casks. Unchillfiltered, it retains all its aromatic richness and natural texture. Maturation in Armagnac casks brings complexity, sweetness, and a subtle woody patina.
Tasting
Golden yellow dress. The nose opens with melted wood, vanilla notes, floral and ripe cereal aromas. In the mouth, a soft attack with citrus accents gives way to a gourmet texture of grain, honey, and mild spices (pepper, nutmeg). The finish is long, elegant, slightly smoky, with a depth that evokes great aged spirits. Can be kept for several years without any problem, or even improved for another 5 to 10 years. Store away from light and temperature variations.
Food pairings
To be enjoyed neat or with a drop of water to reveal all its complexity. It pairs perfectly with semi-cooked foie gras, game terrine, or a dessert made with dark chocolate and orange peel. Also ideal for a contemplative tasting at the end of a meal.
