Maison Aymeric Mazilly is a winery located in Burgundy, France. Founded in 2004 by Aymeric Mazilly, it specializes in the production of great white wines from the Côte de Beaune. The Mazilly family has been rooted in the region for several generations. Pierre Mazilly took over the family estate in the 1950s, and his son Frédéric and grandson Aymeric have continued the tradition1. The estate covers some 19 hectares, mainly in the Hautes Côtes de Beaune, but also in prestigious appellations such as Gevrey-Chambertin, Pommard, Volnay and Meursault. The wines produced by Maison Aymeric Mazilly are renowned for their quality. The red wines are fruity with a well-controlled woodiness, while the white wines are rich, balanced and structured. Every year, their wines win medals in prestigious competitions such as the Concours des Grands Vins de France.

Terroir

Located in the communes of Meloisey and Nantoux, on limestone and clay-limestone soils.

In the vineyard

Vine work follows traditional Burgundian practices: short pruning, controlled yields, ploughing, and sustainable farming to produce healthy, concentrated, high-quality grapes.

Hand-harvested.

Winemaking

Fully destemmed, fermented in temperature-controlled stainless steel tanks. Frequent punch-downs, malolactic fermentation. Cold pre-fermentation maceration.

Ageing

Aged in stainless steel vats and French oak barrels, with light filtration before bottling.

Tasting

Clos du Bois Prévôt red reveals a bright ruby robe with violet highlights, typical of cool-climate Pinot Noir. The nose opens with vibrant aromas of fresh red fruits, griotte cherry, raspberry, enhanced by deeper notes of blackcurrant and a hint of licorice. The palate is supple, lifted by a fine acidity and delicate tannic structure. The wine remains light, balanced, with a subtly spicy finish recalling forest floor and white pepper. A precise, sincere wine with a distinctly Burgundian elegance.

Food pairings

This structured yet delicate Pinot Noir pairs beautifully with slow-cooked lamb shoulder with rosemary or roasted pork tenderloin with red fruit sauce. It also shines alongside mushroom risotto or a Provençal vegetable tian, which highlight its vegetal and spicy nuances. For cheese pairings, go for a well-aged Tomme, Brillat-Savarin, or a slightly warmed Époisses to enhance the wine’s aromatic depth without overpowering its finesse.
