Presentation
Located in the Minervois region, Domaine Des Homs cultivates an exceptional terroir shaped by Mediterranean influences and temperate climates. This family-run estate, certified organic, works with emblematic grape varieties such as Syrah, Grenache, and Mourvèdre. The vines are planted on clay-limestone and stony soils and are carefully tended to preserve the natural balance of the land. In the cellar, vinifications are carried out with precision, favoring gentle extractions and long barrel ageing. The estate’s red wines reveal aromas of black fruits, spices, and garrigue, with a generous mouthfeel and impressive length. A benchmark estate in Minervois for elegant and expressive wines.

Quaternary terraces composed of angular stones and leached clays.
In the vineyard
The vineyard is managed according to organic farming practices. Manual harvesting is carried out using small crates, a key quality step highly valued by the estate.
Harvest
After pressing, natural cold settling occurs (10–12°C), with clarification after 36 hours. Yeasting and fermentation take place at low temperatures (17–18°C) over three to four weeks to preserve freshness and aromatic finesse.
Winemaking
Pressurage. Le débourbage se fait naturellement sous l’effet du froid (10° à 12°). La mise au clair est faite après 36 heures. Levurage et fermentation à basse température (17° à 18°). La durée de la fermentation est de trois à quatre semaines.
Ageing
50% of the wine is aged in barrels, 50% in tanks. Blending and bottling take place in March following the harvest.
