Terroir
The grapes come from five selected terroirs : the Thau lagoon basin, the dried-up marsh of Marseillette, the Upper Aude Valley and the western Aude department. These terroirs lend freshness and minerality to the grapes.
Winemaking
The grapes are harvested in the morning and transported rapidly to the winery. After that, the berries are gently pressed. Ageing on fine lees at low temperature to preserve all the Sauvignon blanc’s flavours lasting just a few months. An early bottling allows to capture freshness and primary flavours.

Doted with lovely colour, this is a round wine with expressive aromas of fruit (passion fruit, grapefruit) and vegetal notes.
Food pairings
Enjoy as an aperitif and with avocado toast, tuna tartar or Crottin de Chavignol (dry goat cheese).
