Presentation

Founded by William Trouillet and Caroline Trouillet Lebeau, this estate is located at the foot of the Roche de Solutré, on the slopes of the Mâconnais. The clay-rich soils allow Chardonnay to develop great aromatic complexity. Vinification is done with minimal intervention to preserve the identity of the terroirs. Aging on fine lees gives the wines a full texture and beautiful persistence. Our major asset: a pure and refined expression of Chardonnay, enhanced by meticulous work in the vineyard and cellar.

Location

The vineyard lies in the heart of the Pouilly-Fuissé appellation in southern Burgundy, on well-exposed slopes and varied microclimates ideal for refined Chardonnay expression

Clay-limestone soils typical of the Mâconnais, offering richness, freshness, and mineral tension.

In the vineyard

Thoughtful, sustainable viticulture: light plowing, natural cover crops, leaf thinning, and minimal treatments ensure vine balance and fruit quality.

Harvest

Manual harvest for optimal grape selection and fruit integrity.

Winemaking

Whole-cluster direct pressing, followed by temperature-controlled fermentation in stainless steel tanks to preserve purity and aromatic freshness. The wine is aged on fine lees for several months to develop roundness and complexity.

Ageing

100% French oak barrels, 30% new, bringing structure and elegance without overpowering the fruit.

Tasting

This Pouilly-Fuissé reveals a bright pale gold color. The nose is delicate and expressive, with notes of white fruits (pear, peach), white flowers, and fresh hazelnut. The palate is round and elegant, structured by refreshing acidity and precise minerality. Oak ageing is well integrated, contributing to a long, elegant, lightly toasted finish.

Ideal with grilled fish, seafood, white meats in sauce, mushroom risotto, or soft cheeses such as Brie, Chaource, or Saint-Félicien.
