Presentation
Domaine Pascal Prunier-Bonheur, located in Meursault, in the heart of the Côte de Beaune, continues the family heritage of five generations of winegrowers. Pascal Prunier took over the reins of the domaine in 1983 with his wife Christine Bonheur. Today, they manage 8 hectares of vines spread between Saint-Romain, Auxey-Duresses, Monthelie, Meursault, Pommard and Beaune. Passionate about and respectful of their terroirs, they work the soil with great care and use grass cover on certain plots to control the vigor of the vines. At harvest time, a rigorous sorting is carried out to keep only the best grapes. In the cellar, the grapes are matured and vatted for a long time, resulting in wines that are concentrated, complex and well-balanced. This approach gives the wines great ageing potential, while remaining accessible and enjoyable from their youth.
Terroir
This cuvée hails from a 0.92-hectare vineyard perched on marl-limestone soils enriched with patches of clay. Situated on the upper slope with a south-west exposure, its vantage point and altitude contribute a distinct mineral and saline structure to the wine.
In the vineyard
Since the 1990s, Pascal has practiced sustainable, raisonée viticulture—reintroducing ploughing, systematically reducing chemical treatments, and embracing organic methods wherever feasible, all without official certification. Guided by a pragmatic and grounded philosophy, he follows the lunar calendar for timing both vineyard and cellar tasks. Sulfur and copper treatments are applied only when needed, and he maintains thoughtful soil management to naturally control undergrowth.
Harvest
Grapes are transported to the cellar swiftly to preserve freshness.
Winemaking
They are pressed gently using a pneumatic press, and fermentation occurs in oak barrels at cool temperatures (18–22 °C) to maintain maximum finesse and aromatic clarity.
Ageing
The wine is aged entirely in oak barrels, with 10–25% new oak depending on the cuvée and vintage. The domaine favors 350 L barrels (over the traditional 228 L), which help preserve freshness and refine aromatic precision. After 13–18 months, the wine may receive light fining and filtration before bottling both operations timed according to the lunar cycle.

This wine is highly expressive, offering fruit-forward and floral aromas. On the palate, the attack is bright and clean, with a beautiful, lingering saline finish that highlights a refreshing structure.

An ideal aperitif wine perfect for light nibbles and appetizers. It pairs especially well with fish terrines, shellfish like mussels, or simply grilled fish finished in butter.
