Location

The M321 cuvée is crafted from a selection of micro-parcels located in Lhéry and Courtagnon, in the heart of the Vallée de l’Ardre, within the Montagne de Reims. This lesser-known area offers a preserved natural setting, away from intensive viticulture zones, ideal for precise, artisanal work. The vines are planted on gently sloping hillsides, with balanced sun exposure and cool nights that favor slow ripening. The moderate altitude, forest proximity, and mosaic of soils create a distinctive identity for each plot—an identity the estate highlights through separate vinifications and thoughtful blending.

Terroir

Winemaking

Ageing

The wine is bottled for secondary fermentation, followed by at least 30 months of lees ageing. This extended time in bottle brings finesse, complexity, and creamy texture. The Brut dosage (around 5–6 g/L) is precisely calibrated to enhance the wine’s natural balance and expressive tension.
